Saffron and Ginger Celery Cauliflower Soup

I love soup. I’m also a little puzzled by people who don’t! Admittedly, I’m not a fan of chilled soup, but I’m sure in the heat of a hot mid summer day I could be persuaded. Just serve it in a tall wineglass with ice and celery sticks!

It’s almost winter here so the theme for the next few months may get a bit soupy. We receive a bi-weekly box from a business called Imperfect Produce. I have it listed in my password keeper as Perfect Produce. I feel that if you can eat it and it has a blemish here or a peculiar carbuncle there or looks different, it’s still a miracle born of the earth and is beautiful, it just has personality! If it was my company I’d rename it I’mPerfect Produce!

Anyhoo.

Apple Sauce Bundt Cake with maple icing

When I woke up yesterday, if you had have told me I’d be baking that evening … in a brand new and much desired and longed for bundt cake tin, I’d have not believed you. Yesterday my partner texted me from a kitchen store where he was acquiring a cheesecake springform pan as he is The Maker of Delicious Cheesecakes in this house. “Anything you need?”, he asked. Just as well it was raining. I’d planned on walking over to meet him, but it was pouring down.

I’m a pushover for two things, plant nurseries and … kitchen shops. It’s bad. Really bank balancing breaking bad.

Keto “English” cream tea Scones

I woke up this morning and needed a cream tea scone. It was that simple. Necessity being the mother of invention I created this recipe just now and holy cow, it worked. I’m recording it right now before I forget the quantities, and my future self can bake them again. They are truly delicious. We had them with butter, raspberry and strawberry keto jam and whipped cream. I’m pretty sure they would be fabulous topped with a good sharp cheese of your choice too. Though not everyone likes cheese with their scones I suppose, I might be in the minority!

Dinner for Two

LCHF Waldorf Salad

Chicken Breast Pesto Rollmops

Roasted Petit Peppers

Spiced Cauliflower Mash

This whole meal started with a Waldorf Salad yearning, which usually is inspired by the beautiful apples in the grocers this time of year. Also, my partner was not feeling the best. I only know how to cook, not how to heal, though in some ways food has amazing properties of healing I suppose. I also wanted to partly test drive this chicken idea as I’d like to make a version if it when our friend comes to dinner.

This is going to be more a summary of what I made and not exact measurements. I’m pretty sure that anyone who visits this blog is a way more accomplished cook than I’ll ever hope to be! Run with your own measurements, instincts and culinary acumen!

My Chaffle Recipe (sweet) with berries and cream

I’ve been putting off trying out the mini waffle maker my partner bought for me … well, I think more nervous about making a keto chaffle itself!

The trick is to work fast, and I mean really fast.

Wow, are they are delicious!

Roasted Squash Boats with Goats Cheese

We bought some lovely goats cheese at the farmers market recently. We took a 2 hour train trip to a university town where there is an amazing art and craft market too. Included in this recipe is the lemon and basil goat cheese we had left over.

Autumn is here and that means winter squash!

Winter squash are wonderful and I love their flavour, especially the Delicata variety. When I bought this beauty I had no idea what it would end up as, I never actually plan a menu and nor do I shop with a recipe in mind. I just purchase what looks delicious in that moment. I tend to create recipes on the fly, they evolve from what is in the fridge or cupboard.

Roasted Zucchini Lasagna

Well, Lasagna is not photogenic! But I think the flavour is worth the effort and there will be leftover unless you’re more than two in your household. I make meals on the weekend for work lunches to box up and this one is perfect. You start out by Continue reading

Radicchio, Bacon and Strawberry Salad

I wish radicchio lettuce was not so pricey. I think it’s a beautiful, delicious veg and so vibrant. When I was at the check out, the person ringing up even double checked the price. So I turned it into Continue reading
