I wish radicchio lettuce was not so pricey. I think it’s a beautiful, delicious veg and so vibrant. When I was at the check out, the person ringing up even double checked the price. So I turned it into a special salad, as it deserved all the delicious things! I had oven roasted bacon left over and lovely lemons and strawberries. So here it is and wow, it turned out tasty. But you know … bacon and fresh summer strawberries, can it really go wrong?!
Before we go further, please let me introduce my garden coffee buddy, Mr Pookie. We’ve been friends for quite a long time now.
Now, for the recipe.
Ingredients (first 8 ingredients are for dressing)
- 1/2 lemon (juice of)
- 1/3 cup of olive oil
- 3 cloves crushed garlic
- 1 tsp mustard powder
- Ground pepper
- Ground salt
- 1 tblsp keto syrup
- Fresh basil leaves, torn up
- 1 large head radicchio
- 1 cup crispy bacon pieces
- 1 dozen fresh strawberries, halved
- 1 bunch chives, chopped
- 1/4 red onion or 1 shallot
Whisk together first 8 ingredients in bowl for dressing. Toss in the sliced strawberries, to marinade in dressing.
On top add:
Add torn pieces of radicchio, bacon pieces, top with chives and red onion, finely chopped. Toss together just before serving.
I’m sure any fruit would be good, black berries or apricots would be fab. Apologies, not many pictures this time, I was not sure if the flavours would work out…
We had this salad with a brunch of Frankfurter’s, fried eggs and spiced zucchinis.
