I love mint in vegetables. It adds zing and summer lightness! Today, we are in the grips of a scary heatwave, salad and leftovers was all we could muster up. Snap peas, dill cucumber pickles and boiled eggs make up this cauliflower “potato” salad. Eaten warm after just assembling is absolutely advised!
Summary: have some eggs boiled and peeled, even if you do them a day ahead. Then we’ll be steaming a head of cauliflower, making the dressing and prepping the veggies and herbs that we layer in. Make sure you have either blue or feta cheese to top with. Or none, if you prefer! I like blue cheese as you don’t need much and it packs in a lot of flavour.
One of the quickest throw together meals for leftover chicken or a handy tin of shredded tuna (which I’m not a big fan of) is shredding a chicken breast or two, adding mayonnaise, a few other diced ingredients and seasoning. I like my Chicken Mayo’ to be chunky, have some tang and a little bit of crunch. If you want some sweetness for those non-keto members of your household, sliced grapes or small dices of firm yellow peaches or apricots are delicious too. A splash of curry powder for a spicier version is also good!
My sister takes full credit for this tasty recipe shared with me recently.
It’s crisp, sparks with flavour and is a keeper.
Thanks SpotiD! 👌❤ it!

I served it with a splash of reduced balsamic vinegar infused with fresh mint. Serve with boiled eggs and kielbasa sausage slices.
I wish radicchio lettuce was not so pricey. I think it’s a beautiful, delicious veg and so vibrant. When I was at the check out, the person ringing up even double checked the price. So I turned it into Continue reading →
From a young age I remember jars of curried green beans my Mum made served with dinner or BBQ’s as a summer salad. I also recall warm days sitting at the kitchen table with a large bag of green beans Continue reading →
