Cauliflower Soul Soup with a Touch of Spice

Ingredients

  • 1 stick butter (4 oz, 113g)
  • 1 large or 2 small onions
  • 1 bunch of celery
  • 1 head of cauliflower
  • 1 thumb of fresh ginger
  • 4 to 8 garlic cloves
  • 1 tsp cumin
  • 1 tsp white pepper
  • 1 tsp dill dried or fresh
  • 1 tsp herb salt
  • ½ tsp dill seeds
  • ½ tsp saffron threads
  • Chicken, beef or onion stock to cover veg, about 4 to 5 cups (1 litre)
  • ½ cup heavy cream

Saffron and Ginger Celery Cauliflower Soup

I love soup. I’m also a little puzzled by people who don’t! Admittedly, I’m not a fan of chilled soup, but I’m sure in the heat of a hot mid summer day I could be persuaded. Just serve it in a tall wineglass with ice and celery sticks!

It’s almost winter here so the theme for the next few months may get a bit soupy. We receive a bi-weekly box from a business called Imperfect Produce. I have it listed in my password keeper as Perfect Produce. I feel that if you can eat it and it has a blemish here or a peculiar carbuncle there or looks different, it’s still a miracle born of the earth and is beautiful, it just has personality! If it was my company I’d rename it I’mPerfect Produce!

This whole meal started with a Waldorf Salad yearning, which usually is inspired by the beautiful apples in the grocers this time of year. Also, my partner was not feeling the best. I only know how to cook, not how to heal, though in some ways food has amazing properties of healing I suppose. I also wanted to partly test drive this chicken idea as I’d like to make a version if it when our friend comes to dinner.

This is going to be more a summary of what I made and not exact measurements. I’m pretty sure that anyone who visits this blog is a way more accomplished cook than I’ll ever hope to be! Run with your own measurements, instincts and culinary acumen!
