I’ve been putting off trying out the mini waffle maker my partner bought for me … well, I think more nervous about making a keto chaffle itself!
The trick is to work fast, and I mean really fast.
Wow, are they are delicious!
Have all your ingredients ready, the dry measured out, the egg beaten, the whisk ready, the waffle iron hot! It’s the quickest dinner I’ve put together and a fine treat!
I prefer a less eggy dough, so this is a bit crisper and enough for two. I made the mistake of thinking it would make one, but the mix I made would have been perfect for two mini chaffles. We just split the large giant puffy one! If you own a larger single waffle maker, it would make a single waffle.
- 2 tblsp cream cheese, warmed with 1/2 tsp butter
- 1/2 packed cup grated mozzarella cheese
- 1 tblsp almond flour
- 1 tblsp oat fiber flour
- 1/2 tsp psyllium flour (optional)
- 1 tsp powdered keto sugar (optional)
- 1/4 tsp baking powder
Warm cream cheese and butter in microwave about 15 – 20 seconds on full power (covered)
Warm mozzarella in microwave about 20 seconds on full power (covered)
Combine the mozzarella cheese and cream cheese/ butter, quickly beat in dry ingredients, then add egg, mix egg in very well mixing fast until well blended (I used a fork to mix). It’s a zany kinda dough!
All the while, heat your mini waffle maker.
Pour in half mix, cook 3 minutes at most (check at 2 1/2 minutes to be safe)
Serve with whipped cream, keto honey, berries and a splash of keto maple syrup.

Also, this product is fantastic for your keto morning coffee mix, it dissolves so well and the collagen has really helped my grumbly knees, skin and nails.
Also … not keto but what pretty apples, they were called opal apples and I bought one because they were so beautiful.
