Hamburger Casserole

Welcome, here is the first recipe of our adventure eating keto.
Hamburger Casserole
Prep Time: 20| Cook Time: 45 | Makes: 8 servings | Difficulty: Easy
Ingredients:
3 heaped Tbls butter
4 cloves garlic, chopped
• 1 large onion, chopped
• 1 lb ground beef or bison
• 1 cup sliced pickled cucumbers, your fave!
• 2 tbsp mustard
• 2 tbsp tomato paste
• 2 cups chopped tomatoes
• ¾ cup almond flour
• 2 cups grated strong cheese
• 2 tbsp chopped parsley
• 3 large eggs
• ½ cup sour cream
• salt and pepper to taste
• 1/2 packet thick-cut bacon
• Instructions
• Preheat the oven to 350 F Grease a large pot with the butter.

Peel and chop the onion and chop the garlic.

Cook for about 5 minutes over a medium heat until brown

Cook the beef with onion and garlic until browned.
Add the chopped pickles, tomatoes and the rest of the dry ingredients.

I add a few tablespoons of the pickle juice for flavour while cooking the meat sauce.

Beat the eggs in a bowl and adding sour cream. Season with salt and pepper and whisk well.
Pour cheeseburger mixture into a large baking dish.

Add the grated cheese on top pour over the beaten egg & cream mixture and stir in with a fork. Top with chopped parsley.

Bake 25 minutes at 360 F, top with sliced bacon and place back in the oven for another 20 minutes.

Let stand a while to set and settle.
Serve in a roll up of lettuce with all the usual burger trimmings, mayo and extra cheese or in a keto bun or toast.

Is great for lunch boxes or non keto friends over for brunch.
