- ⅓ cup Oat Bran Cereal
- ⅓ cup Coconut or Peanut Flour
- 1/2 cup fine keto Brown Sugar
- 1 level Tblspn Baking Powder
- 1 tsp Ground Cinnamon
- 1 tsp Ground Ginger
- 1/3 cup Apple Sauce
- 1/2 cup Buttermilk or Sour Cream
- 3 Eggs
- ¼ Cup of Oil
- 1 tsp Vanilla Extract
- 1/2 cup finely grated Carrots
- 1/2 cup Dried Blueberries or Strawberries
- 1/2 cup Chopped Walnuts, Pecans or Almonds
Method
Stir together all the dry ingredients, the first 8 ingredients in a big bowl.
Mix together the wet ingredients.
Heat your oven to 400⁰F.
Grate the carrot.
Stir the wet ingredients into the dry ingredients. If you think it’s too heavy add a few more tablespoons of Buttermilk, one at a time.
Fold in the finely grated carrots, nuts, and dried fruit of your choice. Use a light hand and try not to over mix!
Portion into a well greased muffin pan and bake at 400⁰F for 20 to 22 minutes or until cooked through.
Let cool until just warm and tuck in!
Notes: These are hearty and a great breakfast or morning snack. If you’re not eating low-carb, use normal flour instead of almond flour, date sugar, and add dates instead of berries. You could use mashed banana instead of apple sauce. I might add orange zest too.Add more spices if you like, and I would double the chopped nuts next time!

Over the years Bob had many offers to sell his company, but instead, as he was getting too old to manage it, he gave it to his employees. The restaurant and retail store have not been profitable for many years, which is understandable considering the location, and that is why they decided to close it down.
