Low Carb Rocky Road Treat

5. ½ cup toasted coconut flakes

6. 1 cup brazil, pecan, almonds or any other nuts to make up a cup

7. ⅓ tsp stevia concentrate powder or sugar to your taste

8. ½ cup chopped sugar-free marshmallows

9. ½ cup keto berries (dried) optional

Method

First, get all your add-ins ready in bowls. Take a pan and line it with parchment paper.

In a large nonstick fry pan, place your butter and chopped bars of chocolate and chocolate chips. Have the heat on low to be safe otherwise the chocolate can become grainy. I used extra chocolate chips as I was worried the two bars were not enough. So 3 bars of chocolate will work too.

Add the stevia (or your choice of low carb sugar) as soon as it starts to melt and stir in well; keep stirring until it’s all very melted and no lumps at all. Sweeten to taste.

Take a moment to appreciate the delicious chocolate aroma and colour. It’s such a miracle gift of the cacao tree.

Then tip in each add-in stirring and coating, mixing in well. Remove from stove and turn off heat.

Keep stirring until all your fillings are well coated. Tip into pan lined with parchment paper and press down spreading into corners until no gaps or bubbles. Or as best you can!

Pop into the freezer for an hour.

Cut into squares or bars and preferably keep in sealed container in fridge. If you don’t add butter, you could probably keep it out of the refrigerator. I added butter for extra shine, richness, and smoothness.

Add your own fillings. You don’t have to use the same as me. Have fun, and this would be great to make with kids! ❤️

I hope you are well and that you’re enjoying a relaxing and comforting holiday season. There is so much going on in our world that is anxiety inducing and gripping our hearts with worry. This is when it’s time to count each small fragile blessing in our day and appreciate it as a  miraculous event to be grateful for. Starting with waking up, LOL! From the sunbeam peeking through a window, to a friend’s treasured smile – anything that you hold dear – let that be a calming hug!

We went to the beach not too long ago and it was wonderful to get away for a week. 

I baked my first Swissroll, and it was filled with a cream cheese rum ganache and cherries for the holidays. Oh, and I topped it with ganache. I’ll try and post it next time I make it. It was a hit in this house!
