2 tsp arrow root powder (optional)
1 tsp mirin (optional)
1 tsp soy sauce
Β½ cup dashi stock (optional)
Method
Make the dashi stock, once cooled stir in the optional ingredients and the soy sauce
Add the beaten eggs to your dashi mix. Btw, the mirin gives it a slight sweetness; you can skip to avoid the carbs.
Make a honey mustard mayo sauce stirring together 1 tablespoons each of keto honey, mustard, and mayo. (I used yuzu mayonnaise)
Heat the pan, grease it, and start your omelette, rolling up each layer from one side to the other with each pour.
When it reaches your desired thickness, remove for serving.
I made a sando but you could also serve over low carb rice, steamed veggies or low carb noodles, bonito flakes and soy sauce, top with black sesame seeds, chopped green onions, and flaked seaweed.
