Vegetable Frittata

Quick recipe on this snowy morning!

Veggie Frittata Ingredients

  • 3 tbls butter or ghee
  • 1 onion or shallot
  • 6 cloves garlic
  • 1 sweet potato
  • 1 courgette
  • 1 bunch chard or kale
  • 4 spring onions
  • 7 baby tomatoes
  • 7 eggs beaten
  • 1/2 cup cream or milk
  • 1 tsp ground pepper
  • 1/2 tsp salt or to taste
  • 1/4 tsp turmeric
  • 1 tsp Spanish or taco seasoning
  • 1/4 tsp chilli flakes
  • 1 tsp paprika

Finely dice all veggies, start off with frying the onions, garlic and when just soft add the diced sweet potato.

When sweet potatoes are just starting to soften add courgette/zucchini and kale. Any veggies could be added that you have, red bell peppers are good too but I did not have any.

When veggies are all cooked to just done – do not overcook! – prepare eggs.

Heat oven to 350F.

Beat eggs with cream and spices. Pour egg mix over cooked veg until covered. Top with sliced baby tomatoes cut side up or you can just use sliced tomatoes, sprinkle over paprika and Spanish or taco seasoning. Turn off pan.

Place in preheated oven, bake 15 minutes and end with grilling the top for 5 minutes.

Serve with avocado, top with grated sharp cheddar or some parmesan cheese, fresh basil if you have and a drizzle of olive oil.
