A belated Happy Birthday cake for my Sweetie!
Here goes. It’s basically the same as the Cakey Cobbler batter, just better cos’ it’s chocolate!
Chocolate Cake
Prep Time: 20 | Cook Time: 40 | Makes: 1 giant delicious cake | Difficulty: Easy
Ingredients:
Make two batches of this batter, to go into your cake pans:
• Melt 1 stick sugar
• Blend in 1/2 heaped cup xylitol sugar (or your preferred keto sugar equivalent)
• Add 1/2 heaped cup sour cream
• Beat in 2 large eggs
• Add 1 1/4 cup almond flour and 1/3 cup cocoa dark is better, organic is best!
• Add 1/3 cup ground flax meal
• Add 2 tsp heaped tsp baking powder
• 2 tsp vanilla essence
Directions:
When mixed, place the batter in a very well buttered cake pans ***(remember you need to double up the batter,so you mix this up twice for each baking pan), and bake about 35 to 40 minutes
DO NOT OVER MIX! Be light of hand and heart!
Topping :
1/2 pint heavy whipping cream, 8 Oz cream cheese (1 packet)
4 Tbl instant coffee
4 Tbl boiling water
4 Tbl xylitol
Beat cream (well chilled) until stiff.
Beat cream cheese.
Add coffee, water and sugar together, mix until dissolved. Add to beaten cream cheese, then add this to beaten cream.
Ice cake when completely cold with topping, sprinkle on cocoa through tea strainer.
Invite your friends! It’s rather good considering it’s flour and sugar free. Has a little texture due to the flax, but I’d rather have texture than an eggy batter.
I really baked and cooked all these three things today, now time to game! I’m into Dragon’s Dogma: Dark Arisen at the mo. It’s fun! It feels like RPG’s are an endangered species these days.
