Brown Butter Spiced Pumpkin Muffins

Cinnamon, cloves, allspice, caramel and vanilla essence with browned butter and sour cream are added to almond flour, ground flaxseed and a few other ingredients to make these LCHF muffins.

I bought a can of organic pumpkin puree when I spotted a carb loaded recipe for pumpkin muffins. I am a tad crazy about muffins so decided to create my own. Funny, never been a fan of pumpkin pie. (Pumpkin cheesecake sounds good though! Pretty much any kind of LCHF cheesecake is great, I think cheesecake is by far my favorite dessert ; )

Anyhow, my partner spotted the can of pumpkin and it was deemed ominous! LOL, also not a pumpkin pie kinda person! So … hopefully these muffins with pass the taste-test.

I think this recipe worked out super great today!

  • 1 stick butter melted (1/4 cup butter, or can use oil)
  • 1 cup brown Sukrin Gold or other keto sugar
  • 1 can pumpkin puree
  • 2 tsp vanilla essence
  • 1 tsp caramel essence (there is a Keto one made with Stevia I used here and it’s fab! )
  • 2 eggs
  • 1/4 cup sour cream or Greek yogurt
  • 2 cups almond flour
  • 1/2 cup ground flaxseed
  • 2 heaped tsp baking powder
  • 2 tblsp heaped cinnamon
  • 2 tsp allspice
  • 1/4 tsp nutmeg and cloves
  • Top with pecan nut halves
  • Dust with cinnamon to finish

Melt butter on stove and brown gently until just a light nutty buttery brown. This is entirely optional but delicious if you do it! Add and whisk sugar until dissolved in butter.

Stir in the pureed pumpkin, add essences, eggs, cream, dry ingredients and whisk until mixed.

Place parchment paper cups into muffin pan, add batter, top with nuts and sprinkled cinnamon.

Bake at 400F for 25 minutes or until baked through. Check with a skewer. They are very light and floofy mooffins, more pudding like, so make sure to …. please let cool ***completely*** before eating, they are dense and moist.
