Sometimes whatever you have in the fridge comes together as a delicious concoction … if the culinary stars align. I had some yummy Austrian Kasekrainer applewood smoked pork sausages studded with Emmenthaler cheese.
After work it’s tough to come home and get enthused about cooking when it’s been a 10 hour work day, but lovely ingredients can inspire! Here is the simple keto dish that manifested itself in our kitchen that evening.
Sausage and Veggie Stir Fry
3 tablespoons ghee or butter
- 1x onion or 3x shallots
- 1 red bell pepper
- 1 large zucchini
- 1 large aubergine
- 4 smoked pork sausages
- 6 cloves garlic
- Parsley to taste
- Mustard seeds, ground
- Dill 1tsp
- Salt and pepper to taste
Melt butter and heat to medium to hot heat.
Add chopped onions until just soft, add rest of chopped veggies until just starting to cook and soften.
Chop up sausage into bite sized pieces and stir in and put lid on pot for about 5 minutes turning down heat.
Meanwhile, slice up your parsley, get your garlic chopped up and the seasonings ready.
Lift lid, turn up heat to very hot, stir in garlic, herbs and seasoning and give it a quick hot finish then serve with a dollop of mustard mayonnaise … basically a tsp of mustard added to 6 tsp mayo.
Any veggies and sausage would work for this, have fun with your own delicious inventions!

A colleague went off to a Conference and was gone about 2 weeks and left their dirty lunch plate on their desk.
I have a giant toy ant which I left on the bean gravy pasted plate.
On their return they were so enamoured with it, it was on display another week as a novelty and was their favourite office topic for the week.
They named the ant … Anthony.
I am lucky enough to work with wonderful, funny and interesting people!
P.S. it did not smell or get gross as our office air is so dry and sterile, it would mummify us all if we did not leave for home each day…
