Bacon Wrapped Chicken and Onion

A quick supper and new favourite that tastes so good but took minutes to prepare. I served this with garlic buttered spinach and
baked slices of yam. Hardly any seasoning was needed, the bacon does that all for you.

  • 4x Chicken thighs
  • 1 rasher bacon per thigh
  • 1 large sweet onion cut into large chunks about the size of a large marshmallow
  • 1 rasher of bacon per onion piece
  • Large roasting pan

Wrap each thigh into a neat parcel as well as the onion slices place in pan and bake 55 minutes in 325F oven.Grill under broiler for nice browning if you prefer a darker finish.I placed peeled slices of yam in a pan with butter and plenty of pepper in the oven next to it and took the yams out when they were done and used that same butter to cook some spinach in with crushed garlic.The onions in bacon were really fabulous and the chicken was lovely and tender. It really needed no seasoning but I’m sure some rosemary, parsley or your herb of choice wrapped in with the bacon would be delicious.But make the onions in bacon, they are just fabulous and would make a lovely breakfast with fried or scrambled eggs or even a delicious hot appetiser with stuffed eggs.
