Good Morning Pancakes

Hello! We’re back home after a wonderful month with my Mum and Sister. This morning we woke up after a week of jetlag and felt like we were over it. So to celebrate a good night’s sleep, I just made us these beauties.

There was one false start when I wanted to get fancy, I put the fruit in the pan to cook in the butter and topped it with the batter … don’t do this! LOL. Though it was the most delicious fail looks wise, it was the best tasting pancake of them all hands down!

I used a pancake mix I bought just before we left. *As I’ve mentioned before this is definitely not a blog to push, advertise or promote or punt any products ever – but wow – this is a nice mix.

Here is the recipe which worked a treat!

One caveat, I added a heaped tablespoon of flax because it’s such a wonderful tasting addition to any baked goodies, gives an added bonus of omega 3 and roughage and also binds the batter nicely.

Keto Pancakes

3 tablespoons butter, melt

3 tablespoons cream

3 eggs

1 tablespoon vanilla essence

1 cup pancake mix (or almond flour, 1 tsp baking powder and 1 dessert spoon ground keto sugar)

1 heaped dessert spoon flax meal

Melt butter, cool.

Add cream and then 3 eggs, whisk together, add vanilla essence.

Add 1 cup (almond) mix and heaped dessert spoon of ground flax. Lightly mix.

Wait until batter binds nicely, about 15 minutes.

Melt a tsp of butter, drop in two tablespoons of batter, spread if necessary into a round.

When bubbles appear through batter, turn very carefully.

Keep gently warm on a plate in the oven and cook the rest of the pancakes.

When done, serve with fresh whipped cream and berries … or your topping of choice.
